Quinoa coconut pudding

 

 

Cook 1 cup of quinoa according to the basic recipe. In a second pot, mix 2 cans coconut milk, 1 stick cinnamon, 3 cloves, 1/2 teaspoon orange zest, and 1/2 cup sugar or honey. Bring to a boil while mixing the liquid and then add the cooked quinoa. Let boil for another 3 minutes while stirring occasionally. Let cool and serve warm or cool.
