Quinoa Kale Green Apple Salad

 

 

Servings: 3-4 persons (full meal) or 6-8 persons (side salad) 

 

Ingredients:

1 bunch of kale 

1-2 green apples 

1 red onion 

2 c. quinoa (cooked and cooled)

 

Home-made Honey Mustard Dressing: 

1/2 c. olive oil (or oil of choice)

2-3 tbsp. apple cider vinegar 

1 tbsp. whole grain mustard 

1-2 tsp. liquid honey 

 

Wash and dry kale leaves. Cut into bite-size pieces. Put in a salad bowl. 

On a wooden cutting board, cut the green apple into bite-size pieces. Put these beautiful apple bits into the salad bowl. 

Next, slice the red onion into bite-size pieces and place in the salad bowl with the other ingredients. 

Mix these ingredients lightly together and cover gently with the quinoa. 

 

Dress the salad with your own home-made honey mustard dressing and enjoy!
 

 

 

Optional Tip! If you prefer your kale leaves to be softer, put the washed and cut kale into the salad bowl and massage with a tablespoon of oil and a pinch of salt before finishing off your salad with the other ingredients. 

Want a creamier dressing?  

Just add a  spoonful of mayonnaise  to  the dressing and shake it up in a glass jar before  drizzling over your salad!
