Quinoa pancakes

 

 

Ingredients

1 cup cooked quinoa

3/4 cup spelt, wheat or quinoa flour

2 tsp baking powder

1/2 tsp salt

1 large egg, plus 1 egg white

1 tblsp butter or coconut oil

1/4 cup milk or coconut milk

2 tblsp maple syrup or honey

Fresh fruit for serving

Quinoa Pancakes topped with Bananas Foster

Bananas Foster Topping: 

2 ripe bananas (the riper the better)

2-3 tbsp. maple syrup, honey, or brown sugar

1-2 tbsp. oil or butter

Optional: one handful of chopped walnuts

 

In a saucepan melt oil/butter on medium heat. Add chopped or sliced bananas and brown lightly. Optional: Add nuts. When bananas are nice and soft add sugar of choice and brown further. To make the bananas saucier, add a little water and stir while on the heat.

 

Drizzle over pancakes and enjoy! 

 

 

 

 

 

 

 

 

Pancake Cooking Instructions

In a bowl, whisk the quinoa, flour, baking powder and salt. In another bowl, whisk the egg, egg white, butter or coconut oil, milk or coconut milk, and syrup or honey. Add the egg mixture to the flour mixture and whisk to combine.

 

Lightly coat a large skillet with butter or cooking oil over medium-high. Pour batter into the skillet according to the size of desired pancake. Cook until bubbles appear on top. Flip the pancake and cook until golden brown on underside.

 

Serve with fresh fruit.
