3/4 cup dried yellow peas

1/3 cup fresh lemon juice

3 tbsp tahini or peanut butter

2 cloves garlic

Salt to taste

1 tbsp olive oil

1 tbsp finely chopped parsley


Yellow pea humus



Cooking Instructions

Rinse and soak peas overnight. Drain and place peas in a pot with water to cover by 2 inches. Bring to a boil, reduce heat, and simmer until very tender, about 1 ½ hrs. Drain, reserving the cooking liquid. Place the peas in a food processor and add the lemon juice, tahini, garlic and salt.

Puree until smooth, adding 2 – 3 tablespoons of the cooking liquid as needed to obtain a soft, creamy consistency. Remove to a shallow serving bowl and garnish with olive oil, parsley, and paprika.

Serve with tortilla chips or warm pita bread.
